After we finish aging our bourbon and whiskey, our barrels usually move on but for our friends just down the road in Decatur, AL at J&L Ranch, we do something special - we share a barrel. They fill it with their incredible local honey, allowing it to absorb the character of the whiskey. When the honey is ready, the barrel comes back home to us, now rich with subtle honeyed warmth, ready for one final purpose.

We fill it once more, creating this honey barrel finished whiskey. Rather than overpowering the spirit, the finishing process allows the whiskey to gently pull nuanced characteristics from the barrel itself. The result is the smooth character Irons One is known for, enhanced by soft honey notes that bring warmth, depth, and balance to every sip. The honey influence is present but restrained.
